Pat\u0159\u00ed k bylin\u00e1m, kter\u00e9 \u010dist\u00ed krev a podporuj\u00ed metabolismus. Ale jako ka\u017edou bylinku je i kop\u0159ivu t\u0159eba u\u017e\u00edvat s m\u00edrou. B\u011bhem jara si mnoz\u00ed dop\u0159\u00e1vaj\u00ed \u010daj z kop\u0159ivy, aby vyhnali posledn\u00ed zbytky jarn\u00ed \u00fanavy a pomohli sv\u00e9mu t\u011blu doplnit l\u00e1tky, kter\u00fdch se mu b\u011bhem zimy nedost\u00e1valo. Kop\u0159iva se v\u0161ak velmi hod\u00ed i na rozmanitou kulin\u00e1rn\u00ed \u00fapravu. V Bulharsku se z list\u016f kop\u0159ivy a mladi\u010dk\u00fdch v\u00fdhonk\u016f d\u011bl\u00e1 tradi\u010dn\u00ed pol\u00e9vka. Jeho zelen\u00e9 listy s typick\u00fdm aroma obsahuj\u00ed spoustu l\u00e1tek, kter\u00e9 t\u011blo doslova dok\u00e1\u017ee nab\u00edt novou energi\u00ed \u2013 od vitam\u00ednu C a B p\u0159es \u017eelezo, drasl\u00edk, j\u00f3d a karotenoidy a\u017e po flavonoidy nebo alicin. Medv\u011bd\u00ed \u010desnek lze su\u0161it, nalo\u017eit do oleje nebo uchovat mrazem. Nejlep\u0161\u00ed je ale \u010derstv\u00fd. M\u016f\u017eete si z n\u011bj p\u0159ipravit sal\u00e1ty, pomaz\u00e1nky, pesto, zach\u00e1zet s n\u00edm jako s ko\u0159en\u00edm a dochutit s n\u00edm pol\u00e9vky, \u0161pen\u00e1t, slan\u00e9 kol\u00e1\u010de, n\u00e1divky a spoustu dal\u0161\u00edho. Kdy\u017e jde o knedl\u00edky, vsa\u010fte na t\u011bsto s obsahem brambor. Nebojte se j\u00edm knedl\u00edky a nejr\u016fzn\u011bj\u0161\u00ed ta\u0161ti\u010dky taky plnit. I kdy\u017e b\u00fdvala lebeda pova\u017eov\u00e1na za plevel, dnes existuj\u00ed tak\u00e9 \u0161lecht\u011bn\u00e9 kultivary, kter\u00e9 jsou v\u00fdnosn\u011bj\u0161\u00ed ne\u017e divok\u00e1 varianta. Se \u0161pen\u00e1tem jsou vlastn\u011b p\u0159\u00edbuzn\u00fdmi. Lebeda je dobr\u00fdm zdrojem v\u00e1pn\u00edku, obsahuje ale taky drasl\u00edk, \u017eelezo, zinek nebo selen. \u0160pen\u00e1t zase nejv\u00edc ocen\u00edte pro vysokou koncentraci chlorofylu, karotenoid\u016f, vitam\u00ednu C. Lebeda je chu\u0165ov\u011b oproti \u0161pen\u00e1tu jemn\u011bj\u0161\u00ed a listy lze skl\u00edzet od jara do podzimu. \u0160pen\u00e1t je pak typickou jarn\u00ed a&nbsp;eventu\u00e1ln\u011b podzimn\u00ed pochoutkou. Z obou lze p\u0159ipravovat pol\u00e9vky, sal\u00e1ty, pomaz\u00e1nky. Jejich chu\u0165 a pestr\u00e9 l\u00edstky vyniknou i v knedl\u00edc\u00edch.
