Je to senzorick\u00e1 j\u00edzda. <\/p>\n\n\n\n<p class=\"has-medium-font-size\">Sladkost jablka je tmav\u00e1, hlubok\u00e1 a p\u0159ekvapiv\u011b umami, fermentace odemkla vrstvy chuti, kter\u00e9 b\u011b\u017en\u011b v ovoci neza\u017eijete. Calvados to cel\u00e9 rozsv\u00edt\u00ed h\u0159ejiv\u00fdm alkoholov\u00fdm dotekem a plamatka? Ta to v\u0161echno zm\u011bn\u00ed. Byl to z\u00e1m\u011br, propojit suroviny, kter\u00e9 jsou samy o sob\u011b chu\u0165ov\u011b v\u00fdrazn\u00e9? Jak se v\u00e1m je poda\u0159ilo sladit?<\/h2>\n\n\n\n<div style=\"height:35px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\">Cht\u011bli jsme vytvo\u0159it explozivn\u00ed umami z\u00e1\u017eitek t\u00edm, \u017ee spoj\u00edme suroviny, kter\u00e9 u\u017e samy o sob\u011b nesou v\u00fdrazn\u00fd chu\u0165ov\u00fd charakter. Kl\u00ed\u010dem ale bylo naj\u00edt rovnov\u00e1hu, nejen s\u00edlu. Za\u010d\u00edn\u00e1me \u0159asou nori, kterou marinujeme v perilov\u00e9m oleji a n\u00e1sledn\u011b su\u0161\u00edme nad ohn\u011bm \u2013 t\u00edm z\u00edsk\u00e1 kou\u0159ovou hloubku a jemn\u00fd bylinn\u00fd n\u00e1dech. <\/p>\n\n\n\n<p class=\"has-medium-font-size\">Uvnit\u0159 se ukr\u00fdv\u00e1 mo\u0159sk\u00fd vlk marinovan\u00fd v dom\u00e1c\u00edm ponzu, co\u017e p\u0159in\u00e1\u0161\u00ed slanost, kyselost i sv\u011b\u017eest. P\u0159idali jsme katsuobushi \u2013 su\u0161en\u00e9 vlo\u010dky tu\u0148\u00e1ka \u2013 kter\u00e9 funguj\u00ed jako umami zesilova\u010d.<\/p>\n\n\n\n<p class=\"has-medium-font-size\">Pro vyv\u00e1\u017een\u00ed jsme zapojili jemnou dom\u00e1c\u00ed majon\u00e9zu na b\u00e1zi tekut\u00e9ho lecitinu, kter\u00e1 cel\u00fd chod propoj\u00ed do kr\u00e9mov\u00e9 harmonie, a pstru\u017e\u00ed kavi\u00e1r, jen\u017e p\u0159id\u00e1 slanou explozi a zaj\u00edmavou texturu. Fin\u00e1ln\u00ed kontrast pak tvo\u0159\u00ed nakl\u00e1dan\u00fd z\u00e1zvor, kter\u00fd cel\u00fd z\u00e1\u017eitek pro\u010dist\u00ed a osv\u011b\u017e\u00ed. Tahle rolka nen\u00ed jen p\u0159edkrm. Je to studie chut\u00ed. A z\u00e1rove\u0148 v\u00fdzva. Sta\u010d\u00ed v\u00e1m to jen jednou nebo se sem budete vracet?<\/p>\n\n\n\n<div style=\"height:35px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Velmi p\u0159ekvapiv\u00e1 je tak\u00e9 uschov\u00e1n\u00ed \u0161\u0165avnat\u00e9ho tatar\u00e1ku do indick\u00fdch \u201em\u00ed\u010dk\u016f\u201c puri. Kde jste na\u0161el inspiraci k&nbsp;tomuto pokrmu? Velmi z\u00e1bavn\u00fd je i efekt, kdy v\u00e1m m\u00ed\u010dek praskne v&nbsp;puse a na jazyku se rozlije kr\u00e1sn\u00e1 a siln\u00e1 chu\u0165 masa.<\/h2>\n\n\n\n<div style=\"height:35px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\">Inspirace na tento chod p\u0159i\u0161la \u00fapln\u011b ne\u010dekan\u011b \u2013 ve streetfood po\u0159adu z Bombaje na Netflixu, kde jsem vid\u011bl klasick\u00e9 pani puri pln\u011bn\u00e9 ko\u0159en\u011bnou vodou. V tu chv\u00edli m\u011b napadlo: Co kdybychom tuhle techniku vyu\u017eili ne na tekutou n\u00e1pl\u0148, ale na n\u011bco jemn\u00e9ho, \u0161\u0165avnat\u00e9ho a intenzivn\u00edho \u2013 t\u0159eba tatar\u00e1k? Tak vznikla tahle fusion verze: telec\u00ed tatar\u00e1k z argentinsk\u00e9 sv\u00ed\u010dkov\u00e9, dochucen\u00fd hov\u011bz\u00edm garumem a jemnou cr?me fra\u00eeche z mal\u00e9 rodinn\u00e9 farmy ve Francii. <\/p>\n\n\n\n<p class=\"has-medium-font-size\">Cel\u00e9 to je\u0161t\u011b dopl\u0148ujeme kou\u0159em z jable\u010dn\u00e9 k\u016fry, kter\u00fd dod\u00e1 hloubku a elegantn\u00ed nasl\u00e1dl\u00e9 aroma. Tenhle chod vypad\u00e1 jako kdy\u017e v\u00e1m v&nbsp;puse vybuchne mal\u00e1 zmrzlinov\u00e1 bomba. Kde jste plamatku objevil a na co v\u0161echno se v&nbsp;gastronomii pou\u017e\u00edv\u00e1? A je\u0161t\u011b jedna v\u011bc \u2013 nem\u016f\u017ee b\u00fdt jej\u00ed pou\u017eit\u00ed nebezpe\u010dn\u00e9?<\/h2>\n\n\n\n<div style=\"height:35px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\">Plamatku \u2013 p\u0159esn\u011bji \u0159e\u010deno plamatku smyslovou (Acmella oleracea) \u2013 jsme se sna\u017eili p\u011bstovat roky. Byla to skoro posedlost. S kolegy jsme zkou\u0161eli r\u016fzn\u00e9 podm\u00ednky, substr\u00e1ty, mikroklima. Ale nikdy jsme nedok\u00e1zali dos\u00e1hnout t\u00e9 intenzity a sv\u011b\u017eesti, kterou jsme cht\u011bli. Zlom nastal b\u011bhem moj\u00ed cesty do Braz\u00edlie, kde tahle rostlina roste p\u0159irozen\u011b. Nav\u0161t\u00edvil jsem tam de\u0161tn\u00fd prales, kde m\u00edstn\u00ed obyvatel\u00e9 vyr\u00e1b\u011bj\u00ed z plamatky alkohol zvan\u00fd jambuzera. Pr\u00e1v\u011b tam mi do\u0161lo, \u017ee jestli ji chci m\u00edt v Tritonu, mus\u00edm ji p\u0159iv\u00e9st odtamtud \u2013 z m\u00edsta, kde m\u00e1 sv\u00e9 botanick\u00e9 i kulturn\u00ed ko\u0159eny. <\/p>\n\n\n\n<p class=\"has-medium-font-size\">V gastronomii se plamatka pou\u017e\u00edv\u00e1 hlavn\u011b v experiment\u00e1ln\u00ed kuchyni a v koktejlech, ale u n\u00e1s se z n\u00ed stal n\u00e1stroj pro vytvo\u0159en\u00ed smyslov\u00e9ho momentu p\u0159ekvapen\u00ed. Brn\u011bn\u00ed zp\u016fsobuje l\u00e1tka spilanthol, kter\u00e1 stimuluje chu\u0165ov\u00e9 poh\u00e1rky a m\u011bn\u00ed vn\u00edm\u00e1n\u00ed chuti. Co se t\u00fd\u010de bezpe\u010dnosti \u2013 v p\u0159im\u011b\u0159en\u00e9m mno\u017estv\u00ed je naprosto bezpe\u010dn\u00e1. Pracujeme jen s mal\u00fdm l\u00edstkem, hosty p\u0159edem informujeme a pou\u017e\u00edv\u00e1me ji s respektem.<\/p>\n\n\n\n<div style=\"height:35px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/prazskeprikopy.cz\/wp-content\/uploads\/2025\/06\/IMG_1115-1024x682.jpg\" alt=\"Restaurace Triton: Inspirace z P\u00e1na Prsten\u016f a tajn\u00fd klenot z Braz\u00edlie\" class=\"wp-image-15278\" \/><\/figure><\/div>\n\n\n<div style=\"height:35px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">P\u0159ekvapiv\u00e9 jsou tak\u00e9 tagliatelle ze \u017ealudov\u00e9 mouky. Kde berete \u017ealudy \u010di \u017ealudovou mouku a jak se v\u00e1m s&nbsp;n\u00ed pracuje?<\/h2>\n\n\n\n<div style=\"height:35px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\">N\u00e1pad pou\u017e\u00edt \u017ealudy v gastronomii p\u0159i\u0161el \u00fapln\u011b ne\u010dekan\u011b \u2013 p\u0159i sledov\u00e1n\u00ed P\u00e1na prsten\u016f. V jedn\u00e9 sc\u00e9n\u011b elfov\u00e9 zm\u00ednili \u017ealudov\u00e9 \u017eel\u00e9 a m\u011b to hned zaujalo. Nejd\u0159\u00edv jsem si myslel, \u017ee je to jen poetick\u00e1 fikce, ale po p\u00e1r minut\u00e1ch hled\u00e1n\u00ed jsem zjistil, \u017ee \u017ealudov\u00e9 v\u00fdrobky skute\u010dn\u011b existuj\u00ed a maj\u00ed dlouhou historii \u2013 hlavn\u011b v tradi\u010dn\u00edch kuchyn\u00edch star\u00fdch kultur. Tak vznikl n\u00e1pad na na\u0161e tagliatelle z \u017ealudov\u00e9 mouky. <\/p>\n\n\n\n<p class=\"has-medium-font-size\">\u017daludy z\u00edsk\u00e1v\u00e1me od mal\u00e9ho farm\u00e1\u0159e ze \u0160umavy, kter\u00fd je sb\u00edr\u00e1 z divoce rostouc\u00edch dub\u016f, daleko od zne\u010di\u0161t\u011bn\u00ed. Po sb\u011bru se su\u0161\u00ed, louhuj\u00ed, aby se odstranila jejich p\u0159irozen\u00e1 ho\u0159kost, a pak se melou na jemnou mouku. Ta m\u00e1 ni\u017e\u0161\u00ed obsah lepku a specifickou strukturu, tak\u017ee t\u011bsto je k\u0159eh\u010d\u00ed. P\u0159id\u00e1v\u00e1me proto trochu semolinov\u00e9 mouky, aby dr\u017eelo tvar. V\u00fdsledkem je zemit\u00e1, o\u0159\u00ed\u0161kov\u00e1 a jemn\u011b nasl\u00e1dl\u00e1 chu\u0165, kter\u00e1 se skv\u011ble hod\u00ed t\u0159eba k lan\u00fd\u017e\u016fm nebo lesn\u00edm houb\u00e1m.<\/p>\n\n\n\n<div style=\"height:35px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Jak\u00e9 jsou ohlasy host\u016f na tento chod?<\/h2>\n\n\n\n<div style=\"height:35px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\">Reakce host\u016f n\u00e1s up\u0159\u00edmn\u011b t\u011b\u0161\u00ed \u2013 mnoz\u00ed jsou p\u0159ekvapeni, \u017ee n\u011bco tak oby\u010dejn\u00e9ho jako \u017ealudy m\u016f\u017ee b\u00fdt sou\u010d\u00e1st\u00ed fine diningu. A \u010dasto sl\u00fdch\u00e1me v\u011btu: \u201e<em>Nikdy by m\u011b nenapadlo, \u017ee budu j\u00edst \u017ealudy \u2013 a \u017ee to bude tak dobr<\/em>\u00e9.\u201c Pro m\u011b osobn\u011b je to d\u016fkaz, \u017ee inspiraci mohu naj\u00edt i ve fantasy filmu. A o to v\u00edc m\u011b bav\u00ed prom\u011b\u0148ovat sny ve skute\u010dn\u00e9 chu\u0165ov\u00e9 z\u00e1\u017eitky.<\/p>\n\n\n\n<div style=\"height:35px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">V&nbsp;\u017ealudov\u00e9m chodu pou\u017e\u00edv\u00e1te tak\u00e9 vegansk\u00fd kavi\u00e1r tonburi, co\u017e je zaj\u00edmav\u00e1 a st\u00e1le pom\u011brn\u011b nezn\u00e1m\u00e1 surovina. Kde jste ho objevil a jak se s&nbsp;n\u00edm pracuje? A co to vlastn\u011b je?<\/h2>\n\n\n\n<div style=\"height:35px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\">Tonburi je p\u0159esn\u011b ten typ suroviny, kter\u00fd \u010dlov\u011bka okouzl\u00ed svou nen\u00e1padnost\u00ed a z\u00e1rove\u0148 v\u00fdjime\u010dnost\u00ed. Poprv\u00e9 jsem se s n\u00edm setkal v japonsk\u00e9 kuchyni, kde se mu p\u0159ezd\u00edv\u00e1 \u201ekavi\u00e1r z rostliny\u201c \u2013 co\u017e zn\u00ed jako sci-fi, ale je to naprosto re\u00e1ln\u00e1 v\u011bc. Ve skute\u010dnosti jde o semena letni\u010dky kochie, kter\u00e1 roste v japonsk\u00e9 prefektu\u0159e Akita. <\/p>\n\n\n\n<p class=\"has-medium-font-size\">Po speci\u00e1ln\u00ed \u00faprav\u011b z\u00edsk\u00e1 tonburi jemnou, kuli\u010dkovitou strukturu velmi podobnou ryb\u00edmu kavi\u00e1ru. Ale tak trochu z jin\u00e9ho vesm\u00edru.
