Prvn\u00ed biokap\u0159i se na tal\u00ed\u0159\u00edch host\u016f objev\u00ed od 24. listopadu a nab\u00eddka potrv\u00e1 a\u017e do \u0160t\u011bdr\u00e9ho dne. C\u00edlem projektu je vr\u00e1tit kaprovi pov\u011bst kvalitn\u00ed lok\u00e1ln\u00ed ryby a uk\u00e1zat, \u017ee m\u016f\u017ee b\u00fdt modern\u00ed i udr\u017eiteln\u00fd.<\/strong><\/p>\n\n\n\n<div style=\"height:35px\" class=\"wp-block-spacer\"><\/div>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/prazskeprikopy.cz\/wp-content\/uploads\/2025\/11\/Bio-kapr-1-1024x683.jpg\" alt=\"Nov\u011b vysazen\u00fd bio kapr z ji\u017en\u00edch \u010cech m\u00ed\u0159\u00ed p\u0159ed V\u00e1noci do vybran\u00fdch \u010dty\u0159 pra\u017esk\u00fdch restaurac\u00ed\" class=\"wp-image-18473\" \/><\/figure><\/div>\n\n\n<div style=\"height:35px\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\">V ji\u017en\u00edch \u010cech\u00e1ch, v tradi\u010dn\u00ed t\u00e1borsk\u00e9 rybn\u00edk\u00e1\u0159sk\u00e9 oblasti, vznikl nov\u00fd biochov kapr\u016f. Za projektem stoj\u00ed spole\u010dnost Essox, jeden z nejv\u011bt\u0161\u00edch \u010desk\u00fdch producent\u016f ryb. Chov prob\u00edh\u00e1 ve t\u0159ech rybn\u00edc\u00edch, kter\u00e9 d\u00edky ni\u017e\u0161\u00ed teplot\u011b vody a p\u0159irozen\u00e9mu prost\u0159ed\u00ed poskytuj\u00ed ide\u00e1ln\u00ed podm\u00ednky pro pomalej\u0161\u00ed r\u016fst ryb a v\u00fdrazn\u011bj\u0161\u00ed chu\u0165 masa.<\/p>\n\n\n\n<p class=\"has-medium-font-size\">Kapr z t\u00e1borsk\u00e9ho biochovu se od 24. listopadu objev\u00ed na v\u00e1no\u010dn\u00edm menu vyhl\u00e1\u0161en\u00fdch pra\u017esk\u00fdch restaurac\u00ed, kter\u00e9 p\u0159edstav\u00ed vlastn\u00ed pojet\u00ed tradi\u010dn\u00ed \u010desk\u00e9 ryby. <em>\u201eChceme uk\u00e1zat, \u017ee kapr nemus\u00ed b\u00fdt jen sma\u017een\u00fd s bramborov\u00fdm sal\u00e1tem. Pro n\u00e1s je to ryba s charakterem \u2013 kdy\u017e se s n\u00ed zach\u00e1z\u00ed s&nbsp;respektem,\u201c<\/em> \u0159\u00edk\u00e1 Petr \u017didek, \u0161\u00e9fkucha\u0159 restaurace Alma, kter\u00fd letos p\u0159iprav\u00ed kapra na \u010derno. Krom\u011b Almy se projektu \u00fa\u010dastn\u00ed tak\u00e9 restaurace U&nbsp;Kalend\u016f, \u0160tangl a Vallmo.<\/p>\n\n\n\n<div style=\"height:35px\" class=\"wp-block-spacer\"><\/div>\n\n\n<div class=\"wp-block-image is-resized\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/prazskeprikopy.cz\/wp-content\/uploads\/2025\/11\/Bio-kapr-3-768x1024.jpg\" alt=\"Nov\u011b vysazen\u00fd bio kapr z ji\u017en\u00edch \u010cech m\u00ed\u0159\u00ed p\u0159ed V\u00e1noci do vybran\u00fdch \u010dty\u0159 pra\u017esk\u00fdch restaurac\u00ed\" class=\"wp-image-18471\" style=\"width:460px\" width=\"460\" \/><\/figure><\/div>\n\n\n<div style=\"height:35px\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\">Biochov p\u0159edstavuje z\u00e1sadn\u00ed odklon od pr\u016fmyslov\u00e9ho p\u0159\u00edstupu, kter\u00fd v rybn\u00edk\u00e1\u0159stv\u00ed dominoval posledn\u00ed desetilet\u00ed. Zat\u00edmco b\u011b\u017en\u00e9 chovy maximalizuj\u00ed po\u010det ryb na hektar, v biochovu je kl\u00ed\u010dov\u00e1 ni\u017e\u0161\u00ed obs\u00e1dka a p\u0159irozen\u00e9 prost\u0159ed\u00ed. Ryby se krm\u00ed m\u00e9n\u011b \u010dasto a pouze certifikovanou bio p\u0161enic\u00ed, bez hnojen\u00ed rybn\u00edk\u016f.<\/p>\n\n\n\n<p class=\"has-medium-font-size\">\u201e<em>V prvn\u00ed \u0159ad\u011b jde o v\u00fdb\u011br spr\u00e1vn\u00e9ho rybn\u00edka, \u010dasto lesn\u00edho, s chladn\u011bj\u0161\u00ed vodou. Ta zpomaluje p\u0159\u00edr\u016fstek, ale zlep\u0161uje kvalitu masa,\u201c<\/em> vysv\u011btluje Jan \u010cul\u00edk, inici\u00e1tor projektu. <em>\u201eTakto chovan\u00fd kapr m\u00e1 jemn\u011bj\u0161\u00ed chu\u0165 a postr\u00e1d\u00e1 typick\u00fd bahnit\u00fd t\u00f3n, kter\u00fd b\u00fdv\u00e1 hlavn\u00edm d\u016fvodem, pro\u010d ho lid\u00e9 odm\u00edtaj\u00ed.\u201c<\/em><\/p>\n\n\n\n<div style=\"height:35px\" class=\"wp-block-spacer\"><\/div>\n\n\n<div class=\"wp-block-image is-resized\">\n<figure class=\"aligncenter size-large\"><img decoding=\"async\" src=\"https:\/\/prazskeprikopy.cz\/wp-content\/uploads\/2025\/11\/Bio-kapr-2-768x1024.jpg\" alt=\"Nov\u011b vysazen\u00fd bio kapr z ji\u017en\u00edch \u010cech m\u00ed\u0159\u00ed p\u0159ed V\u00e1noci do vybran\u00fdch \u010dty\u0159 pra\u017esk\u00fdch restaurac\u00ed\" class=\"wp-image-18472\" style=\"width:460px\" width=\"460\" \/><\/figure><\/div>\n\n\n<div style=\"height:35px\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\">\u010cul\u00edk dod\u00e1v\u00e1, \u017ee my\u0161lenka vznikla z pot\u0159eby pos\u00edlit dom\u00e1c\u00ed konzumaci ryb a zlep\u0161it vn\u00edm\u00e1n\u00ed kapra mezi \u010desk\u00fdmi spot\u0159ebiteli: <em>\u201eNeberu ozna\u010den\u00ed bio jako m\u00f3dn\u00ed slogan, ale jako cestu ke kvalit\u011b a&nbsp;udr\u017eitelnosti. \u010cesk\u00fd kapr se ve velk\u00e9m vyv\u00e1\u017e\u00ed do zahrani\u010d\u00ed, zat\u00edmco u n\u00e1s \u010dasto z\u016fst\u00e1v\u00e1 opom\u00edjen\u00fd. P\u0159itom jde o rybu s minim\u00e1ln\u00ed ekologickou stopou. Studie ukazuj\u00ed, \u017ee bio kapr chovan\u00fd s minimem dokrmov\u00e1n\u00ed zat\u011b\u017euje p\u016fdu a krajinu n\u00e1sobn\u011b m\u00e9n\u011b oproti jin\u00fdm druh\u016fm masa.\u201c<\/em><\/p>\n\n\n\n<p class=\"has-medium-font-size\">Do projektu se zapojily podniky, kter\u00e9 dlouhodob\u011b pracuj\u00ed s lok\u00e1ln\u00edmi surovinami a maj\u00ed vztah k ryb\u00e1m i \u010desk\u00fdm tradic\u00edm. V restauraci U Kalend\u016f chyst\u00e1 \u0161\u00e9fkucha\u0159 Jan V\u0161ete\u010dka pe\u010den\u00e9ho kapra s&nbsp;ko\u0159enovou zeleninou. Martin \u0160tangl z restaurace \u0160tangl p\u0159iprav\u00ed uzen\u00e9ho kapra s brambory pe\u010den\u00fdmi v bramborov\u00e9 nati a do projektu se zapoj\u00ed restaurace Vallmo, kter\u00e1 je pod veden\u00edm \u0161\u00e9fkucha\u0159e Dana Kuka\u010dky vyhl\u00e1\u0161en\u00e1 svou specializac\u00ed na sladkovodn\u00ed ryby.<\/p>\n\n\n\n<p class=\"has-medium-font-size\">Projekt bio kapra propojuje rybn\u00edk\u00e1\u0159skou tradici s modern\u00ed gastronomi\u00ed.
